Cowboy with Garlic

INGREDIENTS

  • 1 Cowboy 2" thick
  • 4 tablespoons of finely chopped garlic cloves
  • 2 tablespoons of finely chopped fresh rosemary
  • 3 tablespoons of unsalted butter
  • 2 tablespoons of olive oil
  • Add sea salt and pepper to taste.

INSTRUCTIONS

  1. Prepare your grill for direct high heat (450ºF - 550ºF or 232ºC - 287ºC)
  2. Brush the cut with olive oil on both sides, season to taste with salt and pepper, add the rosemary and 2 tablespoons of garlic, completely covering the cut.
  3. Sear your cut of meat over direct high heat on your grill for 1 minute per side, then remove and set aside. Place the Weber griddle on your grill over direct heat for 8 to 10 minutes to preheat. Add the butter and the remaining garlic to the griddle, stirring constantly to prevent the garlic from burning.
  4. Transfer the cut to the griddle for 6 to 7 minutes per side, turning only once, to create a crust, or until it reaches an internal temperature of 125ºF for medium.
  5. Remove the cut from the griddle and let it rest for 10 minutes so that the juices distribute evenly throughout the cut. Serve hot.
