Spicy Wings with Blue Cheese Dressing

INGREDIENTS

      • 4 teaspoons of chipotle chile in adobo sauce, chopped
      • 2 teaspoons of coarse sea salt
      • 1 1/2 teaspoons of paprika
      • 1 teaspoon of garlic powder
      • 1 teaspoon of onion powder
      • 1 teaspoon of freshly ground black pepper
      • 16 chicken wings, approximately 1.2 kg in total weight, separated in two at the joint, with the tips trimmed and removed

    HOT SAUCE

    • 3 tablespoons of extra virgin olive oil
    • 1 clove of garlic, grated or chopped
    • 4 teaspoons of apple cider vinegar
    • 2 1/2 teaspoons of hot sauce
    • Coarse sea salt
    • Freshly ground black pepper

    DRESSING

    • 30 grams of crumbled blue cheese
    • 2 tablespoons of sour cream
    • 2 tablespoons of mayonnaise
    • 1 tablespoon of milk
    • ½ teaspoon of apple cider vinegar

INSTRUCTIONS

  1. In a large bowl, mix the pasta ingredients. Add the chicken wings and stir to coat them well with the pasta. Cover and refrigerate for 1 hour.
  2. Heat the oil in a small saucepan over medium heat. Add the garlic and stir until fragrant (about 1 minute). Add the vinegar and hot sauce and heat gently for 1 minute. Season with salt and pepper. Transfer the hot sauce to a stainless steel bowl.
  3. In a medium bowl, combine the dressing ingredients. Cover and refrigerate until ready to serve.
  4. Prepare the grill for indirect heat with medium-high heat (about 230 °C).
  5. Remove the wings from the bowl, allowing them to absorb most of the batter. Grill them over direct heat until grill marks appear (about 4 minutes), turning once. Then transfer them to medium-high indirect fire Continue grilling, with the lid closed, until the meat is no longer pink on the bone and the skin is crispy (about 15 minutes), turning occasionally. Transfer to the bowl with the hot sauce and toss to coat well. Return the wings to the grill and grill over direct heat for another 3-5 minutes, turning once or twice.
